- Roast for 40-45 minutes.
- Remove the potatoes from the oven.
- In a small saucepan add a good amount of olive oil and garlic and heat. Fry for 2 minutes then add the oregano and thyme cook until the garlic start to just about turn brown and remove from the heat.
- Carefully and gently using the back of a fork or spoon squish each of the potatoes down.
- Next pour all the contents from the saucepan over the potatoes and return back to the oven for a further 10 minutes.
