Steps to make Coconut rice:
- Rinse and drain the rice
- Heat the oil in a saucepan and add the cardamoms. Toss for a few seconds in the oil and then add the rinsed and drained rice and salt.
- Fry the rice in the oil for 5 minutes stirring from time to time.
- Add the coconut cream to the 2 1/4 cups hot water and stir to mix. Pour the mix into the rice. Stir to mix.
- Cook the rice on medium high until the water reduces almost completely, and then reduce heat to low. Cover and let simmer for 30 minutes
- After 30 minutes the rice will be cooked and ready to serve. Remove the cardamoms that will have floated to the top, fluff the rice with a fork and serve.
